Apparently the latest version of Camera Connect is picky about the camera nickname. We had it set to the name of the camera owner. Once we reset it to the default "EOS80D" the APP connected to the phone immediately upon the WiFi connection being established. Apparently the APP didn't recognize the camera's SSID built from the non-default nickname.
An eSIM should not make any difference. Its an embedded chip in the phone that holds the IMEI info, same as a removeable SIM. Your phone does not need cellular reception to connect to Canon Connect. You should not need to disable connection to your cellular network via eSIM or SIM card to use the Wi-Fi connection features in the CC App.
