Best set for you would be lvl 80 berserker exotic with schoolar runes, it's the "be all, end all" set for most classes, and when you change it to ascended just use you black lion salvage kit to extract runes from old armor (they are expensive for new players). You can buy exotic armor from tp, or get from citadel of flame dungeon, or just craft it.
If you just hit level 80 then you have a huge part of the story still to experience which you would want to play in this order: Personal Story. Living World Season 01. Living World Season 02. Heart of Thorns Expansion. Living World Season 03. Path of Fire Expansion. Living World Season 04. Icebrood Saga.
The more defensive gear you use, the longer it takes for the enemy to die and the more damage you will take. generally you'll get more value out of defensive skills. Guardian can take some very strong skills at a small/no cost in damage, for example: litany of wrath, stand your ground, advance. energy sigils are also very strong.

The Ascended Gear is the pinnacle of gear in GW2 for most players. Hitting level 80 in Guild Wars 2 is when you really need to start gearing up. If you want to get deep in WvW PvP or the Raiding endgame, the gear you bring along is important. So you need to know where to look for it, and start working towards that goal.

Posted September 22, 2021 (edited) It just levels you up, gives you some (not very useful in the long run) starter level 80 gear, and unlocks a few waypoints so you can go do some endgame event maps. All the story stuff will still be there and you'll still be able to do it normally, in the right order.
